It was 28℉ when we started to pick.

Late Harvest Petit Manseng

Yesterday was our last day of harvest.  We’ve been patiently waiting for Petit Manseng to get to the flavor profile and concentration intensity to make a dessert wine. Cold temperatures shift the flavors from fresh and fruity to honeyed and jammy. As in Jurançon France, Petit Manseng’s home turf, these tiny grapes dehydrate in the late fall. This gives us the concentration necessary to make the style of sweet wine that we so adore.
